Pumpkin Lasagna Rolls

Pumpkin Lasagna Rolls – Recipe originally from FitGirls


  • Box of Lasagna noodles
  • 15 oz Canned pumpkin
  • 15 oz ricotta cheese
  • Nutmeg
  • Ginger
  • Garlic
  • Marinara Sauce
  • Mozzarella Cheese


Preheat the oven to 350. Boil the lasagna noodles. While boiling, mix the equal parts pumpkin & ricotta. Sprinkle ginger and nutmeg, add a healthy helping of garlic.

Lay out the boiled noodles on paper towels and dab off the excess water. Spread the ricotta mixture into the noodle and roll up. Place in a greased baking dish.

These ingredients make about 12 rolls or so. Pour some marinara on top and bake covered for 20 minutes. Uncover and add mozzarella, then bake for another 5 minutes.
